Grilled Sweet Potatoes

Colorful, tasty, with a nice zing... and healthy! My 6-year-old nephew even said he loved 'em. Kid tested, mother approved, and another good excuse for Dad to fire up the grill.

INGREDIENTS

  • 4 sweet potatoes, rinsed and peeled
  • juice of 1 lime (about 2 tbsp)
  • 1/4 cup of olive oil
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon kosher salt
  • a healthy pinch of freshly ground black pepper

INSTRUCTIONS

Bring a large pot of salted water to a boil. Slice sweet potatoes into 1-inch rounds. Place in pot of boiling water and cook for 5-7 minutes, until barely tender.* Be careful not to overcook. Remove sweet potatoes from water, and drizzle a little olive oil over top.

Fire up your grill. Whisk together the remaining olive oil, lime juice, cilantro, salt, and pepper.

When the grill is hot (you can hold your hand 5 inches above rack for 1 to 2 seconds), place sweet potatoes on grill. Do this in 2-3 batches if you don't have the surface area. Grill for 1-2 minutes on each side, until grill marks appear.

Serve sweet potatoes with vinaigrette drizzled on top.

NOTES

* Test the doneness by inserting a knife. It should slide in easily, but not break apart.
